The Shishito is a popular Japanese heirloom known for its small, slender, and wrinkled green fruits that are traditionally harvested while immature for a mild, savory flavor. While mostly sweet and thin-skinned, approximately one in every ten peppers packs a surprising, fiery kick of heat. These highly productive, compact plants reach maturity in about 60 to 65 days and are a staple for blistered appetizers when quickly seared in a hot pan.
