The Guajillo is a popular Mexican heirloom known for its smooth, leathery, and translucent skin that transitions from a deep green to a brilliant, reddish-brown at maturity. It features a mild-to-medium heat and a unique flavor profile characterized by sweet, berry-like undertones with a subtle hint of green tea. These productive plants mature in roughly 80 days, and the peppers are most famously dried and toasted to create the rich, complex base for authentic salsas and traditional red moles.
