The longest cayenne pepper from China measures 10 inches in length. It was originally given to Ulla Grall, the owner of a German seed company. Unlike most other cayenne types, this pepper has a pleasant spiciness, ranging from 2,000 to 5,000 SHU. It starts off green and ripens to a vibrant red, making it ideal for pickling when still in its green stage. Once red, it develops a slightly sweet flavor. These peppers are often dried as Ristras. The plants can grow tall and vine-like and to support their growth it is recommended to stake them well or use tomato cages. Despite their height, these plants are highly productive and will continue to yield a bountiful harvest throughout the season. They are perfect for stir fry, salsa, and drying.
